Mama Watson's Rum Balls:

2 1/2 cups finely crushed vanilla wafers* - 1 1/2 cups confectioners' sugar
2 tablespoons cocoa powder - 1/2 teaspoon ground allspice

1 cup of finely chopped toasted walnuts**
2 tablespoons of honey, heated or light corn syrup
1/2 cup Dark Rum***

 

In large bowl, sift together 1 cup of the confectioners’ sugar, cocoa powder and allspice. Stir in the RUM and Corn Syrup. Stir in the vanilla wafers and walnuts, and mix well. Place in refrigerator to firm up slightly, about 30-45 minutes. The mixture may appear dry and crumbly; this is OK…

Place the remaining 1/2 cup of confectioners’ sugar in a shallow bowl. Take from fridge and form mixture into balls -- size is up to you. Roll in confectioners' sugar. Place on baking sheet, wrap with plastic and put back into fridge overnight (this is best so they set). Or, eat right away.


Variations:

* 2 cup gingersnap crumbs   

** Mixed nuts, chopped

*** Grand Marnier

 

* 2 cup Nutter Butter crumbs

** Honey-roasted salted peanuts, left whole

*** Vanilla or chocolate spirit


* 2 1/2 cups cinnamon graham cracker crumbs

** Coconut flakes

*** Rum
